Slow-Cooked Country Ribs
Ingredients:
3 pounds pork country ribs
2 cup chicken broth
1 cup beef broth
Montreal steak seasoning
Cajun seasoning
Directions:
1. Rub ribs with steak seasoning and Cajun-- just enough to lightly coat them
2. Place in a large roasting pan
3. Add chicken and beef broth
4. Cook for 5 hours at 250 degrees or until ribs are fork tender
5. Use over pasta, rice or with BBQ sauce for sandwiches
Summertime Apricots
15 apricots
1/3 cup brown sugar
1/3 cup white sugar
1/2 teaspoon cinnamon
Dash of clove
1 stick of butter
Directions:
1. Remove pits and stems from apricots
2. In a large cast iron skillet over medium heat, melt butter
3. Add sugar, brown sugar, cinnamon and clove stirring to incorporate all ingredients
4. Lower heat and slow simmer until apricots are soft
5. Serve alone or over ice cream; you can even serve them over country ribs
